When you tip carving skis on edge, they will immediately start turning because of the smaller sidecuts, which makes turning easier and faster. But the more aggressive sidecuts also increase the risk of catching an edge. The higher speeds also send increased force across the joints, which can lead to more severe knee ligament injuries.
